Savory, also known as “Satureja hortensis L.,” is cultivated in the winter and the summer. Although summer savory is better known, winter savory has the same uses and flavor. It is one of the oldest herbs used for cooking in Europe. It has a taste that resembles that of thyme and rosemary, with a hint of pine. Savory works harmoniously with soups, stuffing, and butters.
